"Modernity" and U.S. farm women's poultry operations. Jane Adams,Southern Illinois University

Chickens, because they were largely produced by women, played a significant though poorly understood role in the processes through which farm families became "modern". A brief sketch of poultry production in the U.S. helps delineate their role.
- Chicken and egg production for sale provide an index of the developing domestic market for consumer foodstuffs. This market was fueled by an expanding population, most of it in cities. This growth in urban population was directly linked to industrial development.
